At the helm of the kitchen is Chef Javier Tortosa, who is committed to Mediterranean dishes, where seasonal and locally sourced products are the true stars. With extensive experience in countries such as France and Ireland, Javier—born in Villena—returned to his homeland to elevate traditional Alicante cuisine to new heights.

Word of mouth from satisfied customers has made Fondillón a gastronomic landmark in the city, a restaurant known for the quality of its cuisine and excellent service.
