The birth of Agua de Valencia originated in the spring of 1959, at a time when a group of Basque travelers frequented the Cervecería Madrid. They used to ask for “Agua de Bilbao”, referring to the best sparkling wine in the house. Tired of always asking for the same thing, they challenged the owner to offer them something new, asking for advice, and he suggested they drink “Agua de Valencia”. They agreed to try the cocktail that Constante Gil prepared at that time and they did not stop drinking it on their subsequent visits.
The owner of the Cerveceria Madrid , located a few meters from the Palace of the Marqués de Dos Aguas, prepared this drink with the following ingredients
2 parts of freshly squeezed Valencian orange juice
2 parts of Valencian cava
1 part gin
1 part vodka
Ice
This cocktail was usually served in a pompadour glass or low cava glass, although it is currently served in a flute glass.
